PUMPKIN Protein Bars
Makes 10 bars
1 cup pumpkin seeds
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 cup of pitted dates, soaked for 15 minutes or more
3 tablespoons of water
1 cup (vanilla) plant-based protein powder
2 tablespoons raw cacao
Additional raw cacao for dusting
COMBINE YOUR INGREDIENTS. Add all ingredients to a high speed blender and blend.
SET. Pour the dough into an 8x8 baking dish and press down until firm. Put the dish into the freezer for 30 minutes and then cut into bars. Dust with raw cacao. If you do not want to make bars, you can roll them into balls as well.
