- Leftover turkey, cut into small quarter-inch pieces (cold)
- Leftover mashed potatoes (cold)
- Leftover stuffing (cold)
- 1 large egg
- 1/4 cup milk
- 1 cup gluten free breadcrumbs (we use gluten free panko)
- 2 tbsp vegetable oil
Place beaten egg and milk in one bowl, and panko breadcrumbs in another.
In a third bowl, combine 1/4 cup mashed potatoes with 1/4 cup turkey and 1/4 cup stuffing. With bare hands, mash it all together and form into a ball. Place on plate and repeat.
After all balls are formed, dip each into egg and then coat with panko breadcrumbs.
Pan fry balls until golden brown.
Serve covered with leftover gluten free gravy with jellied cranberry sauce as a side.
